SUGAR PASTE WITH Tylose
(used to make sugar flowers and fine decorative pieces in sugar)

1 cup icing sugar (sifted) |
|
1 egg white (slightly broken up) |
|
3 teaspoons Tylose (also known as CMC, Methocel, Cologel, Bagolax) |
|
+/- ½ cup extra icing sugar (sifted) |
|
vegetable fat |
METHOD
| 1. | Put egg white in a glass bowl. |
| 2. | Gradually add the one cup of sugar, mixing well between each addition. (royal icing ) |
| 3. | Sieve the Tylose and ½ cup of icing sugar together. |
| 4. | Gradually add to the royal icing until the paste is too difficult to stir. |
| 5. | Apply vegetable fat to your hands and knead the paste, adding icing sugar until a workable paste is achieved. |
| 6. | Place the ball of paste in a plastic bag and then seal in a plastic container. |
| 7. | Allow the paste to stand for 2 hrs. before using. |
| 8. | Adjust the consistency with the Tylose and sugar mixture. |
| 9. | If any of this mixture remains, it may be re-sieved and stored for future use. |
| 10. | Knead the paste once a week when not in use. |

refrigerated in hot weather |
| 12. | Keeps for approx. 2 months. |
